I stripped two layers of vinyl off of my kitchen/half bath floor in preparation for installing hardwood. I found one area where there is a crown in the 5/8" plywood flooring of about 1/2" from a joist that is larger than the adjacent joists. If I lay a level across the floor on the crown I have about 1/2" drop to the joists on either side. Should I rent a sander to smooth out the crown? Is there a floor leveler material that would work with hardwood flooring for this type problem? Or, should I shim the joists on either side of the crown to smooth out the crown?

One solution would be to remove the plywood to each of the lower joists then strike a chalk line down the high joist. Then, using an electric planeer on that joist, plane until you are level with caulk line. Plainers do not make a lot of dust and planing should go quickly. Then replace the plywood.
